Tom’s Pantry is a home-based artisanal bakery specialized in authentic organic sourdough bread, the traditional leavened bread that was common centuries ago before yeast was developed. The bakery also produces a selection of non-gluten sourdough bread, Keto bread, cookies, desserts, and pastries. The bakery operates an uninspected kitchen and sells at farmers’ markets along with some home delivery. The bakery is in operation since 2019 and has experience at four farmers markets.

With a mechanical mixer and two oven ranges, the bakery has a current capacity of about 12 loaves per hour, or about 60-70 loaves with a single worker in a day of about 14 hours including cleaning and packing. In 2021, the bakery wishes to hire an assistant or apprentice baker in order to reach about 120 loaves in a day with overnight fermentation and plans to attend two markets: the Parkdale Market in Ottawa and the Vankleek Hill Farmers’ Market.

The work week is about 32-35 hours over 3 days:

  • Thursday, about 9 hours from noon to 10pm, non-gluten sourdough bread, Keto bread, cookies, desserts, pastries, ingredients and leaven for overnight fermentation and Friday baking.
  • Friday, about 14 hours from 6am to 8pm, mixing, fermenting, baking, packaging, cleaning.
  • Saturday, about 10 hours, travelling to market, selling, and the return trip.

Responsibilities

Working with the business owner:

  • preparing and measuring ingredients, controlling inventory,
  • mixing recipes, operating the mechanical mixer and the stoves,
  • kneading, folding, stretching, shaping, and fermenting dough,
  • learning and mastering the techniques and details of successful sourdough and pastry baking,
  • packaging, labelling, packing, handling orders,
  • travelling to and from the farmers’ market,
  • selling, explaining, interacting, handling payments with customers, and
  • cleaning the equipment, pans, utensils, and the work space.

Requirements

  • The wage may be subsidized by the Canada Summer Jobs program. Therefore, the age limit to apply is 30 years.
  • Secondary School Diploma; post secondary education is an asset; culinary education is an asset, especially baking.
  • Proficient in English, both written and orally. Fluency in oral French is a desirable asset.
  • Excellent skills in customer service and communications, good arithmetic, strong reliability and integrity, strong work ethic, excellent autonomy on the job.
  • In good health, strong endurance, ability to spend long periods standing and walking, ability to lift and handle weights including bags of 20 kg, ability to handle a hot working environment, tolerant of flour dust in the air.
  • Must possess a mid-sized vehicle able to carry several baskets of product to market, plus a folding table and signs.

Job Location : at the employer’s home.

Remuneration : $18 per hour, no overtime pay for long days but overtime pay if the work week goes over 40 hours. No other employment benefits. The employer pays mileage at a rate of 55 cents per km to travel to the market and back.
