Position: Farm to Table Kitchen Manager

About Juniper Farm

Started in 2010, Juniper Farm is nestled into the Gatineau hills on a 200-acre property in beautiful Wakefield, Quebec, growing a diversity of vegetables on a 5-acre rotation using organic and biodynamic methods; the farm also produces fermented foods and some prepared foods from our commercial kitchen. Production is accomplished through manual labor with support from two tractors. The farm sells its produce to many local restaurants in the Ottawa/Gatineau region, numerous retailers, private orders, as well as through both on-site and online farm stores. As an active member of the thriving local community the farm occasionally hosts events such as dinners, workshops, and festivals.

Farm to Table Kitchen Manager

Ideal candidate will be bilingual (French/English), independent, collaborative, and willing to work weekends AND have experience in and a passion for:

  1. Great tasting food
  2. Recipe development for baking, cooking and processing
  3. Seasonal cooking, local and organic food
  4. Improvising with seasonal ingredients
  5. Processing simple farm food ie. canning, pickling, pestos, fermentation
  6. Leading a small team of people

Primary duties and responsibilities:

Fermented Foods (Sauerkraut) (1-2 days per week)

  • Manage and train kitchen employee(s)
  • Coordinate scheduling with employees
  • Manage production inventory for sauerkraut
  • Manage ordering of all ingredients for sauerkraut
  • Manage overall kitchen systems and sauerkraut making protocol
  • Ensuring attention to detail in terms of quality and processes for kraut
  • Manage kitchen cleaning and organization. Striving for extreme cleanliness with a routine cleaning schedule
  • Working efficiently to achieve tasks in timely manner
  • communicate inventory with farm admin
  • Proper time management to accomplish weekly tasks
  • Weekly meeting to discuss overlapping kitchen/farmstore/farmhouse interactions with farmhouse staff
  • Record keeping for organic certification
  • Managing the label inventory and UPC labels with Juniper Farm admin
  • Managing the packaging inventory and ordering with Juniper Farm admin

Takeout window production (2-3 days per week)

  • Making menu for additional takeout food ie. soups and salads and continue with already developed takeout food: panini, muffins, scones etc.
  • Managing takeout window staff
  • Managing inventory in freezers
  • Creating recipe books of Juniper Farm treats
  • Ordering ingredients

Farm processed foods (1 day per week)

  • Flexibility to make small batch food out of the seconds coming in from the fields ie. pestos, salsas
  • Being ready with ingredients for pickling, salsa, relish, hotsauce etc so that we can continually be producing farm food in-house.
  • Work collaboratively to outfit the kitchen to be able to properly produce farm food in house.
  • Work with Admin on packaging and labelling of small batch projects

Other possible projects

  • Once a week staff meals from May-Oct. Simple farm meals made with (mostly)farm ingredients keeping multiple diets in mind. Ie. vegetarians etc

Compensation

  • This position is paid $20/hr + 25% food discount at store + all food from the fields for personal eating included
